
Deconstructed Stuffed Bell Peppers Casserole
Ladies, we we would like to bring you more frugal, family friendly recipes. We hope you enjoy these with your family. This is a favorite of my husband. It is reminiscent of the old fashioned stuffed peppers, but in a casserole.
Deconstructed Stuffed Bell Pepper Casserole
1 tbsp Oil
1 lbs ground beef, turkey, chicken, or pork (works with all of them)
1 small onion chopped
2 cloves garlic minced
2 large bell peppers
Tsp garlic powder
Tsp onion powder
½ tsp basil
½ tsp sage
½ tsp oregano
1 tblsp parsley
½ cup chicken broth
1 small can of mushrooms (or fresh if you have them)
¼ tsp red pepper flakes
Can of diced tomatoes
Salt and pepper to taste
1 cup Mozzerella Cheese
1/2 cup parmesan cheese
Brown your ground meat. Add onions until soft add garlic cook until aromatic. Remove from pan. Cut up bell peppers, slice however you like them. Cook until soft. Add meat mixture back in pan. Add remaining ingredients. Cook for 10 minutes, adjust seasoning. Transfer to 8×8 pan. I use a cake pan, square. Heat oven to 375. Cover with cheese and cook for 30 minutes until bubbly. Remove and cool 10 minutes before serving.

You can serve this over rice, also.
