
Homemade Seasoned French Fries
These fries are so easy and so versatile. You can use any seasoning you enjoy. When mine come out of the fry oil I sometime sprinkle with Siracha Salt or Chile Lime…

These go great with a hamburgers or even a hamburger patty with gravy.
4-5medium Russet Potatoes
1tsp Paprika
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
½ C all purpose flour
2 c Lard or Vegetable oil
Mix flour and spices. Set aside.
Cut potatoes in slices then lengthwise making your French fries thinner or thicker as you desire.
In a large bowl, in sink, fill with cold water and place French fries in the water. Let sit for 5 minutes then rinse with cold water until water is clear. Set French fries on tea towel on counter to dry a bit.
French fries should be a little damp as you place in big bowl. Pour flour mixer over the fries and toss. After well coated sit on pan or cooling rack for about 10 minutes. Letting the coating set.

As you are waiting you could start your frying oil or lard in heavy sauce pan. I do mine in two batches to get them good and crispy.
You will need to watch these closely as they brown they can quickly burn.
