Quarantine Series of Frugal Meals: Slumgullion & Cornbread

Now, this recipe has so many variations depending on what you have in your cupboard. I will list a few different ways my momma made this dish. I had this growing up and I didn’t know it was a cheap meal until I got older. I just knew it was good ,comforting food. Food does not have to be expensive to be good, or create good memories.

  • 1 Can Corn
  • 1 Can Green Bean
  • 1 lb Ground Beef
  • 1-2 tsp Garlic powder to taste
  • 1-2 tsp Onion powder to taste
  • 2 cans tomato sauce
  • 2 carrots sliced thin
  • 1 Cup Water
  • ½ Cup elbow macaroni
  • Salt and pepper to taste

Brown the ground beef, add carrots, cook on medium until softened. Add Corn and Green beans, no need to drain. Add tomato sauce and water. Add in macaroni and salt, pepper, onion and garlic powder. Cook until macaroni is cooked. Serve hot.

  • 1 lb Ground Beef
  • 1 Can Corn
  • 1 Can Green beans
  • 1 Can stewed tomatoes crushed
  • 1 can green chilies (mild)
  • 2 cans tomato sauce
  • 1 Medium onion
  • 1 Cup elbow macaroni
  • 1 Tsp Parsley
  • 3 Cups Water
  • 2 Beef Bullion cubes
  • Salt and Pepper to taste

Brown the ground beef, add onion and can of green chilies. After onion is softened, add tomato sauce, stewed tomatoes, green beans and corn. Add Water and bouillon cubes, bring to boil and add macaroni, garlic powder and salt and pepper to taste. Bring back to a boil until macaroni is soft. Serve Hot.

Suggested Beverage: Sweet or Unsweet Tea, Iced Water Easy Cheap

Corn Bread

  • 1 Cup Cornmeal
  • 1 Cup All Purpose Flour
  • 1/8 C Sugar
  • 1 tsp Salt
  • 3.5 tsp Baking
  • 1 Cup milk
  • 1 Egg
  • 1/3 C butter or margarine

Preheat oven 350 degrees Combine dry ingredients: cornmeal, flour, sugar, salt and baking powder Combine wet ingredients seperately: egg, milk and melted butter. Combine wet and dry ingredient.Mix well. Put in 8×8 pan and bake for 30-35 minutes or until done. Remember all ovens are different and you know your oven, just keep an eye on it. Enjoy
